Welcome to your new favorite potato chip recipe! These sweet potato chips are seriously crispy, and made 100% in the air fryer with a few simple ingredients.
The best part? You don’t need to use an excessive amount of frying oil to get these nice and crispy. Whether you’re eating these chips as a side dish, for a snack, or for your main meal, you’ll never want to eat sweet potato chips any other way.
Ingredients for Sweet Potato Chips
- For the sweet tater chips: A large sweet potato, thinly sliced with a mandolin.
- To oil before air frying: Olive oil spray, but avocado oil spray would also work.
- For the seasoning: Flakey salt and fresh chopped chives.
Ingredient Swaps
Potatoes: we’ve tested this recipe with sweet potatoes, russet potatoes and Yukon gold potatoes and all worked well.
Seasonings: we seasoned these sweet potato chips with a simple combination of sea salt and fresh chopped chives, but our everything bagel seasoning or even our Old Bay seasoning would be tasty.
Oils: we love using olive oil spray for this recipe because it’s a neutral oil with a moderate smoke point. Avocado oil spray would be a great alternative.

Should I peel my sweet potato? The option is yours. We prefer to leave the skin on, but peeling Is definitely an option.
The potato chips take about 15 minutes to crisp up in the air fryer. However, you can only do one batch at a time, so the cooking time will vary based on how large the potatoes are.
We’ve tested this recipe with sweet potatoes, russet potatoes and Yukon gold potatoes and all worked well. Note that the variety of the potato you use will influence the cook time.
If you do not have olive oil spray, you can use 2 tablespoons of olive oil. Instead of spraying the rounds of potato use a pastry brush and lightly brush each round with olive oil. Try to avoid drizzling the olive oil over the potatoes, you will end up with inconsistently air-fried potato chips.
The color of each chip may vary depending on how evenly the potatoes were sprayed with olive oil and the type of air fryer used.

Air Fryer Sweet Potato Chips
Ingredients
- 1 large sweet potato
- 1 tablespoon flakey kosher salt separated*
- olive oil spray*
- 1 tablespoon fresh chives chopped
Instructions
- Preheat the air fryer to 325ºF.
- Use a mandolin to carefully slice the potato into very thin slices, about 1/16-inch thick.
- Line the bottom of the air fryer with the potato rounds only overlapping the rounds slightly.
- Spray the potatoes with the olive oil spray and season with about ¼ teaspoon of salt.
- Cook the potato for about 15 minutes, flipping or tossing the potatoes every 5 minutes. You may need to use tongs to individually flip the potato rounds.
- When the potato chips are golden brown*, transfer them to a paper towel-lined plate.
- Repeat steps 3-5 until all of the potato rounds have been made into chips.
- Serve with fresh chives and chip dip.
